Rick Hoffman's Blueberry Cheesecake Bars

Blueberry Cheesecake Bars

17.5 oz pouch Betty Crocker Oatmeal Cookie Mix
½ cup butter, softened
1 egg
3 - 8 oz blocks cream cheese, softened
¾ cup sugar
½ cup whipping cream
3 eggs
Blueberry fruit spread
1 ½ cups blueberries

Beat cookie mix, butter, and egg until soft dough forms. Press dough into a greased 9” x 13” pan. Bake for 15 minutes at 350°F. In another bowl, beat cream cheese and sugar until fluffy. Add whipping cream and eggs and mix well. Add spreadable fruit over the partially cooled crust, sprinkle with blueberries, and pour the cream cheese mixture over the top. Bake for about 40 minutes or until the center is set. Refrigerate at least 2 hours before serving.

Rick Hoffman was born in New York City on June 12, 1970, and raised with a very modest upbringing in Roslyn Heights. After graduating from the University of Arizona with a theater degree, he worked waiting tables for years to pay his bills while auditioning for television and movie roles. In 2000, he landed a regular role on the Fox drama, The $treet. He is best known for his roles in Billions, Ballers, and his most memorable role as Louis Litt in the hit series "Suits."

The Science Behind Cloud Colors

Everchanging cloud formations can be mesmerizing in the sky. Did you know the light a cloud receives from the sun determines its color? Each color in the visible spectrum represents electromagnetic waves of differing lengths. As the wavelength increases, the colors change. Some of the most picturesque clouds occur close to sunrise and sunset when they appear in brilliant yellows, oranges, and reds. In the case of thicker clouds, such as stratus, sunlight passes through but is blocked, which gives clouds a grayish appearance.
